Great information. I never knew there was such a difference in grain vs. grass fed beef. How does one know, or how can one tell if the beef is grass or grain fed? I am very interested in being able to tell the difference.

I'm not a rancher, but my parents are so I can offer this "FYI" for whatever enlightenment it might provide: The part about "a land intensive way to produce our food" is seen by the folks in cattle country as worn-out, many-times-disproven propoganda. Cattle pasture is rocky and otherwise absolutely useless for growing food. Ask any midwest realtor if land that is suitable (or even can be made suitable) for farming isn't the most expensive when it comes to agriculture. If cattle weren't grazing the vast percentage of ranch land out there, it would only be good for either building or hunting. It may be difficult for people in more populated areas to fathom, but here in the midwest we tend have a LOT of open space between and around our towns and cities. No, really. Take your idea of "quite a bit of land" and make it exponential. Nobody is clamoring to use it for anything other than ranching, with the exception of builders who are using it to slowly expand suburbia and generica. Still, there is PLENTY of land left for raising cattle. :o)
