The Best Salad of Summer. ~ Jenny Roth

Mixed Greens with Asian Honey-Mustard & Ginger Dressing

This salad is a perfect lunch for a hot summer day and is certain to impress your friends and family.

The Asian honey mustard dressing compliments the crisp, shredded beets and crunchy almonds – a perfectly harmonious and beautiful salad. This dish is excellent alone or as a tasty accompaniment to a light summer dinner of steamed vegetables, or a basic Thai noodle dish. This salad is super addictive.

Ingredients:

Mixed salad greens with spinach

Toppings:

  • ½ medium red beet, peeled & grated
  • 1 carrot, peeled & grated
  • 1-2 scallions, chopped
  • Toasted sesame seeds or sliced almonds
  • Cucumber slices (optional)

Asian Honey-Mustard & Ginger Dressing:

  • 1 cup canola oil ( I use plain sesame oil)
  • 2 Tbs. rice wine vinegar (can use more to taste)
  • ¼ cup soy sauce
  • 1 lemon, juiced
  • 3 cloves garlic, minced
  • 2 Tbs. minced fresh ginger root
  • 1 teaspoon prepared Dijon-style mustard
  • 1-2 Tbs. honey (use according to taste…can substitute sugar)

Directions:

  1. In a blender, combine the soy sauce, lemon juice, garlic, ginger, mustard & honey. Blend for a few seconds then add the oil in a steady stream, blending constantly. When all of the oil is incorporated into the dressing, pour into a glass jar and chill until serving.
  2. This is a great basic recipe to work with. Sometimes I add a scant tablespoon of mayonnaise and a teaspoon or so of sugar, some toasted sesame oil & ½ tsp. minced onion.
  3. Keep Refrigerated
