The Perfect Post-Workout Cookie. ~ Anastasia Halldin

15 Minutes to A Healthy, Delicious, Gluten-Free Vegan Treat.

Have you ever eaten a cookie after a workout or yoga class and felt guilty about it? I have a perfect after-exercise cookie recipe for you. It’s rich in fiber, iron, magnesium, vitamins B and other nutrients.  It is also vegan, low calorie, gluten-free, added sugar-free and has avocado for fat. Oh, and it takes 15 minutes to make, so you have no excuses not to try baking it.

Note: If you don’t need to avoid gluten, both whole wheat flour and spelt flour work well in this recipe.

 

Perfect Post-Workout Cookie

2 cups rolled oats (gluten-free variety is fine)

1 cup gluten-free flour mix

1 tsp. baking powder

1 tsp. cinnamon

¾ cup walnut pieces

½ cup dried cranberries

¾ cup raisins

2 mashed bananas

1 mashed medium avocado

1/3 cup olive oil

2-3 packets Stevia

1/3 cup water

Preheat the oven to 375 degrees Fahrenheit. Mix all dry ingredients. Slowly mix in the wet ingredients. Mix well to combine. Lightly oil a cookie sheet. Using a spoon, place cookies on the cookie sheet about one inch apart. Bake for 12 minutes, or until the cookie edges are starting to get darker.

Allow to cool on a baking rack or plate and enjoy.
