Kale’s high concentration of antioxidant vitamins makes this curly, powerful green a delicious must for all.
Super-rich in vitamin K, one cup of kale contains 36 calories and five grams of fiber.
It contains 15 percent of your daily requirements of calcium and vitamin B6 (pyridoxine), 40 percent of your daily magnesium requirement, 180 percent of your daily vitamin A requirement, 200 percent of your daily vitamin C requirement and 1,020 percent of your daily vitamin K requirement.
Kale is a great source of minerals such as copper, potassium, iron, manganese and phosphorus. It is an excellent source of antioxidant vitamins A, C and K.
Now, on to the yummier stuff. Here are two delicious kale recipes I would love to share with y’all:
3/4 cup chopped kale, ribs and thick stems removed
1 small stalk celery, chopped
1/2 cup apple juice
1/2 cup ice
1 tablespoon fresh lemon juice
Place the kale, celery, banana, apple juice, ice and lemon juice in a blender, whizz until frothy and sip away!

Baked “Kale’stina” Chips:
Rub (with love) torn pieces of kale with the following, all together in perfect harmony: coconut oil, unsweetened coconut flakes, raw cacao powder and enough honey or maple syrup to drizzle on top and stick the goodies together. Lay them out on a baking tray, and slap that baby in an oven heated between 250 and 300 degrees Fahrenheit for 20 to 30 minutes.
Sprinkle with sea salt and cool. Then put them in your mouth. ♥
