Our eyes are the windows to the beauty around us, like the smiling faces of loved ones, spring blossoms and the twinkling of stars in the sky.

How about showing ‘em a little gratitude by fueling your diet with the nutrients that make
them feel loved—vitamin A and C, beta-carotene, omega 3s and 6s, and amino acids.

My happy peepers apricot berry splurge smoothie comes packed with each of these
nutrients courtesy of a few of my favorite super foods for all kinds of cell-lovin’
yumminess.

Cheers to happy eye balls!

what you’ll need:

1 ripe organic apricot
1 cup organic mixed frozen berries
1/2 cup goji berries
1/2 organic avocado
2 fistfuls of spinach
1 cup unsweetened hemp milk
2 tablespoons hemp seeds
3-5 dashes of turmeric
Stevia, to taste (optional)
Water and ice, to desired consistency
* Makes enough for you and a pal.

how to make it:

1. Place all of the ingredients in a high-powered blender.
2. Blend on high for 30-60 seconds.
3. Add more water or ice to make the consistency just the way you like it.

Sharing is caring! This recipe makes two servings. So, if you don’t have a smoothie
buddy near by save the second half of this smoothie-licious concoction in an airtight,
glass container.

Store it in your fridge or lunch cooler for a nutritious snack later in the day.

    This odd assortment of ingredients is something I definitely want to try. I might substitute almond milk for hemp milk, but I love the idea of adding half an avocado. I tried that with something else recently and it gave it such a nice creamy texture.

  4. You're welcome, Tanya! I love how you're willing to step outside your comfy cozy zone and adventurize your eating experience. Almond milk is a great option, too. I used hemp milk because hempseed it's touted to having the perfect 3:1 ratio of Omega fatty acids needed by the human body, which are crucial for eye health. And, I'm totally with you on how just 1/2 an avocado can transform the texture tremendously — it puts the "smoothilicious" into smoothies! :)

    • Sweet! Get those kiddies on it, Kim! You can always add stevia or dates to add sweetness. And, frozen bananas, coconut flesh or tahini to add thickness and texture.

      Smoothies are such a great way to sneak in foods they don't like to eat. When I was a kid my mom would sneak in all kinds of foods — like spinach, asparagus or cauliflower! The taste would disappear behind the sweetness of the fruit. She even did it with soups. I went through this weird phase where I hated chewing so I wouldn't eat to the point that I eventually made myself go anemic. Yikes! Amazing how freaking out my mom as a child catalyzed her creativity and eventually my love for everything smoothies, eh? ;)
