What happens when I have a little extra time and a lot of extra tomatoes?

Homemade Bloody Mary mix, that’s what!

This is so good you could leave out the vodka, sprinkle on a little fresh snipped dill, and have it as a chilled soup. It takes less than five minutes and will blow your socks off with it’s summer goodness.

Bonus: it’s good for you too!!!

Serve at parties with discretion. (Your guests may never leave.)

photo-15(A high powered blender like a Vitamix is handy here, but you could use an immersion blender or a regular blender if need be. Your bloody might be a little chunky, but hey, so are some of my favorite people. If texture in your drink grosses you out, just eat it as a hearty summer soup. Yum!)

1 lb approx of fresh tomatoes

1/2 red onion, rough chopped

1 medium cucumber, rough chopped

3 cloves garlic, peeled

1 jalapeno pepper (seeded for a milder flavor, or not if you like it spicy. Honestly, I put two unseeded jalapeno peppers in mine, but that’s the way I roll.)

juice of 1 lemon

juice of 1/2 lime

1 tsp sugar

salt and fresh cracked pepper to taste

Blend all ingredients well and chill.

Makes four plus servings of drinks or soup.

If serving as a cocktail, you will need some kind of top shelf vodka, plus garnishes which can include; lime or lemon wedges, dill pickles, green olives, pickled onions, celery stalks, celery salt for rimming the glass (Just slide a fresh lime  wedge around the glass rim, and turn glass upside down on a plate sprinkled with celery salt), or anything else that strikes your fancy. Fill glasses with ice. Pour in one shot vodka (or 1 1/2 if you’re like me). Fill glass to rim with Bloody Mary mix. You won’t need to mix the drink, it will mix itself as you pour. (Old bartender trick) Garnish and enjoy.

If making as soup, pour in bowls and top with fresh snipped dill or basil. For a lovely lunch, serve with good toasted bread drizzled with olive oil, and topped with slices of ripe avocado and a little fresh lemon juice, salt and pepper.

photo-16*If Bloody Mary mix is too thick, simply add fresh tomato juice (squeeze fresh tomatoes by hand into a bowl and strain. It’s messy but kinda fun. If any kids are around they will love to help.) Add a 1 tsp plus of tomato paste if the flavor is not tomato-y enough for you.

(Here is a picture of the exact same recipe served as soup with dill blossoms and avocado toast—I can’t decide which way I like it better!)
