Chocolate-Dipped Almond Butter Cookies

A lower-sugar, more nutritious alternative to the traditional peanut-butter cookie!

  • 1 cup natural almond butter
  • 1 tsp stevia
  • 2 large eggs
  • 1 cup organic, dark chocolate chunks
  • 1 tbsp. coconut oil

Preheat the oven to 350 degrees.

Line a baking sheet with parchment paper and set aside.

In a medium bowl mix together almond butter and stevia until smooth.

Add eggs and mix together until well combined. Scoop about 1 tablespoon per cookie onto the parchment paper and gently press down with your hand. Bake for 10-13 minutes or until golden brown and allow to cool completely once finished.

Meanwhile, melt dark chocolate chunks in a small saucepan. Once completely melted, add in coconut oil and whisk to combine.

Once cookies are cool, dunk half of each one into dark chocolate mixture and place back on the cookie sheet. Place on cookie sheet and cookies into the freezer for about 25 minutes to allow chocolate to set.
