Market Fresh Flat Beans with Garlic Chive Sauce. {Recipe}

I’m a huge fan of all types of string beans and a firm believer that just because they’re good for you, doesn’t mean they have to taste bland!

This simple garlic-cream sauce is one of my favorite ways to compliment steamed vegetables and it turned out to be the perfect base to accompany these beautiful market fresh flat beans.

Market Fresh Flat Beans with Garlic Chive Sauce

  • 1 bunch organic fresh flat beans
  • 1 tablespoon extra-virgin olive oil
  • 1 clove garlic, minced
  • 1 teaspoon fresh chopped parsley
  • 1 teaspoon fresh chopped chives
  • 1/4 cup low fat plain Greek yogurt
  • 1-2 tablespoons 1% milk
  • 1 pinch cayenne pepper
  • Fresh ground salt and pepper

Clean the flat beans (trim them if desired) and place them in a steamer basket. Bring about an inch of water to a boil. Set the steamer basket over the water, cover and steam for 3-5 minutes. In a small pan, combine the olive oil, garlic, parsley and chives. Sauté over medium heat until the garlic is lightly browned and fragrant. Remove from heat and stir in the yogurt, add milk to thin the mixture to the desired consistency. Season generously with salt and pepper to taste.

When plating, start with a bed of flat beans drizzled with garlic chive sauce. Top with a pinch of cayenne pepper and micro greens.

Enjoy immediately!
