End-of-Summer Recipes for Meat-Free Monday!

Less meat does not have to mean less taste.

But when applied on a massive scale, it does mean less harm for the environment and less misery for animals.

And a massive scale begins with individual choice. Meat Free Monday is a movement designed to help us take baby steps towards reducing our meat intake. We can start with just one day a week that is entirely—and intentionally—meat free.

And when that starts to become a habit—and a pleasure—maybe we’ll consider it doing two or three days a week. But even if we just stick with one definite meat-free day a week, it still makes a difference. The more individuals that reduce their meat intake, the better the outcome for all of us in the long run.

So to help encourage and inspire elephant readers to reduce meat consumption, here’s a selection of suggested recipes for your own Meat Free Monday. Bon Appetit!

Breakfast: Strawberry Avocado Smoothie

Having strawberries for breakfast is a great way to hold on to that summer feeling for as long as we can. And for avocado junkies, this is the perfect summer smoothie.

If you’d rather skip the avocado, there are three alternative summer smoothies to choose from here.

Lunch: Roasted Tomato Soup

This is my own recipe and a personal favorite. It’s also perfect for using up a glut of tomatoes, if you grow your own. Although the soup-making element doesn’t take long, you will need to roast the tomatoes first. To make it spicy, add chili flakes at the roasting stage, or fresh chili while sweating the onions. Without the spice, it’s equally delicious.

If you don’t have time for the roasting, try one of these cold soups instead.

Dinner: Zucchini & Corn Veggie Burgers

Although I don’t miss meat, I do occasionally miss a burger. And when I have a burger, I do like to have fries with them. And while it might be a bit fiddlier than throwing a processed and frozen burger on the grill, I do think making your own from scratch is worth the extra effort.

The quicker way to cook these burgers is to grill them, but you can also bake them—which is convenient if you’d like to enjoy some sweet potato fries with them. And that would be my recommendation!

Burgers and fries that are filled with natural goodness—gives a new meaning to “feel good” comfort food.

Desert: Sangria Fruit Salad

Chop fruit and marinate in booze—you can’t get easier than that. And you deserve an easy desert after going to the trouble of making your own meat-free burger.
