My Favorite Thing to Do With Quinoa. {Vegan, Gluten Free Recipe}

Do you like spicy food? Do you like quinoa? Do you like recipes that only require one dish to cook? Then this one is for you!

Quinoa is a delicious and nutritious food that easily absorbs the flavors of the other spices and ingredients you cook it with. It’s also a complete protein all on its own, is packed with healthy fiber, and is a good source of important minerals like magnesium. But there’s still a lot of us out there who don’t know many recipes to use it in. Even I have only found a few that I really like. This is one of my favorites though, and makes a really hearty vegan dinner.

Here’s what you’ll need to make about 4 portions:

  • 1 cup quinoa
  • 3 cloves of garlic
  • 1 jalapeno
  • 1 onion
  • 3 tomatoes
  • 1 bell pepper (any color)
  • 1 cup corn
  • 1 can of black beans
  • 1 lime
  • 1 avocado
  • 1 cup vegetable broth
  • 1 small bunch of cilantro
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 2 tbsp olive oil
  • salt and pepper to taste

Start by slicing and dicing the garlic, jalapeno, onion, tomato, bell pepper, avocado and cilantro. Saute all of these with the oil in a pan.

Cook them just long enough for them to get warm and soft, and for the onion and garlic to start releasing their aromas, about 5 minutes. Now add the quinoa. Stir it around in the hot oil to coat and give it a light toast, about 2-3 minutes. Then add the broth to the pan and bring everything to a boil.

As the quinoa begins to absorb the liquid, add the cumin, oregano, corn and black beans. Mix them in to make sure they get warmed thoroughly. Once all the liquid is absorbed, squeeze the juice of the lime over the top.

There you go, an awesome one-pot vegan supper.
