Protein-Packed, Refined-Sugar-Free, Vegan Date Balls. {Recipe}

Date Balls

These little guys taste like cookies, but they are gluten-free, dairy-free, soy-free, egg-free and incredibly delicious!

One of my favorite go-to treats are these date balls. They taste like a sweet caramel dessert, but they are loaded with protein, plant-based fats, fiber and omega-3 fatty acids. Also, if you are pressed on time you can skip the rolling-into-balls part and just press the mixture into a glass baking dish and make a cake!

Date Balls:

1 cup raw walnuts
1 ½ cups raw almonds
10 pitted medjool dates
1 ½ tsp vanilla extract or ½ a vanilla bean pod
2 Tbsp coconut oil (melted)
Optional toppings: chia seeds, desiccated coconut, hemp seeds, sesame seeds, cinnamon or raw cacao

Put the walnuts and almonds into a food processor and process until there are no big pieces of nuts (about one minute). Then put the dates, vanilla and coconut oil in the food processor and process until the dates are well combined (about two minutes). Taste your creation!

Take pieces of the mixture and roll them into small balls. Next, add your toppings by rolling the balls into whichever topping you choose. Let your delicious treats chill in the refrigerator for at least 2 hours prior to eating. After serving, if there are any left, be sure to store them in the refrigerator or freezer. Enjoy!
