Canning report: perfect peach jam!

For the record, making jam isn’t anywhere near as hard as it would seem. It is time consuming, yeah, I won’t lie about that, but it was a great way for my son, his best friend, and I to spend a Sunday afternoon. Once we got the peaches peeled, pitted, and chopped, the rest was easy. The kids had their share of questions, especially once they found out how much science was involved, and it was fun to take the time to help them learn about the process. The result? Nine jars of some of the most beautiful looking peach jam I’ve ever seen. We even had enough leftover to add to some pancakes and as a sauce over some Boulder Ice Cream; warmed up and poured over a scoop of Sweet Cream with a scoop of cinnamon, I could have sworn I had freshly made peach cobbler in my bowl. The perfect end to a great day.
