Salad of Curried Carrots & Green Papaya. {Recipe}

Curry is one of my favorite spices.

Just a whiff of the aroma sends me to distant lands.

When all else fails, a little curry will liven any dis.

So I’m here to give you one of my most beloved curried salad recipes.

What You Need for the Salad:

  • 4 cups grated carrots, (approximately 10 medium carrots, grated)
  • 2 cups green papaya, sliced into 1/2-inch long pieces
  • 2 cups snow peas, sliced into 1/2 long pieces
  • 1/2 to 1 cup dried cherries
  • 1 cup pineapple
  • 1 bunch scallions thinly sliced (optional)

What You Need for the Dressing:

  • 1/2 cup raw cashews, soaked for at least six hours and drained
  • 1/2 cup fresh almond milk
  • 2 teaspoons sweet yellow curry powder
  • 1/2 teaspoon tamari
  • 1 tablespoon agave
  • Himalayan Sea Salt to taste
  • I like to add 3 drops of lime essential oil to this dressing.

What You Need to Do to Make it Happen:

1. Combine carrots, snow peas, green papaya, pineapple, dried cherries and scallions together in a large bowl and toss.

2. Blend all the dressing ingredients in a  high-speed blender until smooth.

3. Toss salad in dressing

P. S. The reason I use essential oils in my recipes is they have amazing holistic properties.

Lemon oil: Infamous for its cleansing properties. It is also extremely refreshing and it can elevate your mood.
