I am Powerful Chia/Oat Goodness. ~ Sue Adair

It’s simple! It’s easy! It’s cheap! And, it’s raw! Can it get any better?

This is a raw vegan breakfast composed of oat groats, chia seeds, raisins and nut milk that is prepared the evening before. If you are the industrious type, you can even make up enough for the whole week. It’s portable too, so you can bring it to work so you can munch on a healthy breakfast. Explore your grocery store’s bulk department for savings when buying the oats, chia seeds and raisins.

For one serving:

1/3 C Organic Oat Groats.

1 to 1 1/2 T Organic Chia Seeds.

A handful of organic raisins.

Nut milk of your choice. Make your own or buy a prepared organic nut milk if you are short on time.

Container with a lid—I use a smaller glass mason jar.

How to:

The night before, put the oats, chia seeds and raisins in your container. Cover with nut milk. I don’t really measure the milk, but I’d estimate that it’s a little over a cup.

Chant these words over the concoction: “I am Powerful.”

Stir well. (Be mindful, those chia seeds seem to get stuck in a clump!) The oats and chia will absorb the nut milk for a thicker texture in the morning.

That’s it!

In the morning, stir again and add fruit of your choice, if you’d like. Repeat the words again, “I am Powerful.” Berries or cut up banana is very yummy. Be sure to experiment with different types of nut milk or dried fruit. Or you could add a mashed over-ripe banana.
