Chia seed pudding on our way to the surf!
It’s this easy to make: throw some chia seeds in a mason jar, add 2.5 times the amount of coconut milk, a dash of maple syrup, a pinch of vanilla bean (optional) and a pinch of salt.
Stir well and leave in the fridge while you put your bikini on, feed the dogs and put the boards in the car (10 minutes), then grab and eat in the car on the way to the beach!
I added some berries on top but it’s delicious as is, too.
Chia seeds are a great source of plant based protein and will keep you content and energized all morning. Enjoy!
