Since the City of Irwindale, California (scoff scoff) is suing Huy Fong Foods until it ceases to make citizens’ noses bleed and lungs burn with airborne Sriracha, I thought you may need this recipe.
I also wrote a short mantra/prayer that you can say to encourage the hot sauce gods to bring Sriracha back into production.
This recipe gets you pretty darn close to mimicking the real Sriracha. Note: I’ve done it a few different times, and I add the Thai chilies, salt, fish sauce, and rice vinegar to taste…this recipe is approximate.
Here is how to do it:
What you need:
1 1/2 cups fresh red jalepenos (seeded and sliced)
10 Thai red chili peppers (definitely seeded)
4 cloves garlic
3 tablespoons rice vinegar
2 tablespoons tomato paste
2 tablespoons sugar
3 tablespoons fish sauce
2 tablespoons canola or safflower oil
water to desired thickness
Put all the above ingredients in the blender and blend until the contents look like Sriracha. The mixture may be orange because we aren’t using red color additives in this variation!
Recite this prayer/mantra while you are making the fake Sriracha. The mudra that accompanies this prayer is an okay sign, symbolizing the twisting of the Sriracha cap tip and the opening of all good and spicy things into the cosmos. This prayer brings one good foodie karma and energetically encourages the re-opening of the Sriracha factory:
