I am only one mommy from Houston, TX,

but sometimes I have ideas,

About how to make normal things…

into something yummy!

Freedom is a very old idea…

Freedom…

is it being able to have all the new stuff you want?

No, that can’t be it!                                                                 *

I am only one mommy in Houston, TX,

…but I know what it takes to make a Revolution.

I saw it in Paris at the CPU/CPE protests in 2006.

The students rose up for better job contracts,

and everyone supported them.


…and it worked!

Now mother earth is at stake…

My friends and I…

We are good at making old things,

new again!

We are small,

but we have some ideas

Freedom Pie

“the revolution begins and ends with the pie”

Soon after we had moved to Houston, Abilene and I were thinking about baking a pie. Then, one day when we were on a walk in apartment complex some birds knocked down a bunch of berries from the trees above our heads; we collected them and combined them with things we had  and my Grandma Bobbie’s crust recipe….and called it “Freedom Pie”


Crust

3 Cups of flour

1 & 1/4 Cup of shortening

1 teaspoon salt

1 egg

1 Tablespoon vinegar

1/3 cup (or less) cold water

combine shortening, flour and salt (cut into).
combine water, egg & vinegar, mix lightly and roll out into 2 or 3 crusts . will freeze.

Pie

1 & 2/3 cups of apple juice or apple cider

3/4 cup snipped dried apricots or peaches

3/4 cup dried pitted plums

1/2 cup dried cherries or raisins

1/3 cup packed brown sugar

1/4 all purpose flour

1/4 teaspoon dried nutmeg

1 cup chopped, peeled apple or pear

1/2 cup broken walnuts

(or substitute any of the above fruit for fresh berries, etc. making sure that all elements  = 3 cups)

1. Prepare and roll out pastry. Press pastry into 10 or 11-inch pan..

2. For filling, in a medium saucepan combine apple juice, apricots, plums, berries. Bring to boiling; reduce heat. Simmer, covered, for 10 minutes. Remove from heat. Meanwhile, in a large bowl stir together brown sugar, flour and nutmeg; add apple and walnuts. Gradually stir dreid fruit mixture into apple mixture.

3. Transfer filling to the pastry-lined tart pan. Top with pastry strips in a lattice pattern (see photo). If desired, brush pastry strips with milk and sprinkle with granulated sugar. Bake in a 375 degree oven about 45 minutes or until fruit is bubbly and pastry is golden. Cool on a wire rack.
