Boulder: Burnt Toast Closes, Sells to Dakota Soifer. New Name: Cafe Aion!

Update: had our longtime acquaintance Dakota’s last name wrong. It’s Dakota Soifer, and here’s the new name: Cafe Aion, awesome, honoring the old bookstore that was in there before Burnt Toast, and whose name is still painted on the old brick outside! Go, go! One of our offices/homes-away-from-home/favorite breakfast lunch spots in the world has sold to our friend Dakota and is closing, just discovered on twitter, after tonight’s dinner and tomorrow’s lunch/breakfast. Just popped by and saw Buddy, one of the owners. Now at Kitchen, just told buddy Dave Rogers, he and Shawna jetted over there after some chocolate delight via Kitch. Go, Go!

We broke this story, not a story we wanted to break, when we heard the news via an acquaintance on twitter. Even the staff found out today (now yesterday). Photos from last dinner, poetry reading last night. I ordered an amazing fancy grilled cheese sandwich and butternut squash soup, made by Buddy himself. My friends had wine, beer, pasta, other things.

I loved their bread especially the fruit nut and the fact they served quinoa with their eggs! Sorry to see them close.
What is sad to see is the Hill dying. Little clothing shoppe Lounge closed this week, the Sushi Spot that open maybe a month ago doesn't seem to last, the 13th St cafe closed. What's next? And what's is to become of it?
I think Burnt Toast sold–it didn't go out of business. Still, yes, the Hill hasn't had much support it seems from the City…would be great to get a few more stable, strong community spots like Burnt Toast in there.
Not to worry… Cafe Aion, which is moving into the Burnt Toast space will be improving upon what Burnt Toast started, a restaurant with heart for everyone of the University hill and boulder community; Professionals who live in the area, university staff and visitors and local business owners…
The Cafe is s opening early march…
As a folk singer who played across the street 50 years ago, I worry that there will no longer be a place to expose students and other denizens of The Hill to the the gentle and meaningful music we used to play.
