Ground Juniper Berry & Cayenne-Crusted Kale Chips. {Recipe}

These aren’t your boring kale chips.

Cayenne and fresh ground juniper berries join forces to create this spicy and interestingly earthy snack. I wasn’t sure what to expect when experimenting with this spice combination, but these chips were addictive, nutritious AND reminiscent of gin. Gin for the win!

 

Ground Juniper Berry and Cayenne Crusted Kale Chips

  • 1/4 – 1/2 teaspoon fresh ground dried juniper berries
  • 1/8 teaspoon sugar
  • 1 pinch cayenne pepper
  • 1/4 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 bunch fresh kale

Preheat oven to 350 degrees. In a small bowl combine the fresh ground juniper berries, sugar, pepper, paprika and salt.

Mix well and set aside until ready to use. Tear the kale into pieces and place in a large bowl, add olive oil and toss to evenly coat. Spread the kale out on a baking sheet and evenly sprinkle with the spice mix. Bale for 15 minutes or until crispy. Remove and season with additional ground juniper berries to taste.

Enjoy!

I like to toss a few whole juniper berries in the mix for presentation and top with a spritz of fresh lemon juice right before eating!
