Vegan Tiramisu Fudge {Recipe}.

Tiramisu is one of my favorite desserts.

It literally means “pick-me-up” in Italian due to the caffeine from espresso and chocolate, protein from eggs and cheese and the Marsala wine zing.

This tiramisu fudge has no alcohol, nor eggs and cheese but it combines chocolate and coffee which of course still tastes really good and offers the same pick-me-up.

This is another way to enjoy the flavors of tiramisu that takes less time and ingredients to make. It uses coconut oil as the creamy base and has coffee for an extra caffeine boost and honey and salt to add more flavor. The cocoa, cocoa nibs and vanilla extract are optional. This is a simple, quick vegan recipe showing that it can be simple, realistic and non-intimidating.

Ingredients:
1 cup coconut oil
1 cup semi-sweet chocolate chips
Pinch of salt
¼ cup cocoa powder (optional)
1 cup cocoa nibs (optional)
2 Tbs. instant coffee dissolved in 3 Tbs of hot water
2 Tbs honey
1 Tbs vanilla extract (optional)

Directions:
Melt coconut oil and semi-sweet chocolate chips in microwave for 60 seconds. Stir. Heat in 10 second intervals until completely melted. Combine well. Add the rest of ingredients. Combine well. Pour mixture into parchment lined glass dish. Freeze until solid, approximately one hour. Lift out parchment paper and place on flat surface. Cut into pieces with a knife. Store remaining fudge in freezer. Enjoy!
