Easy Vegan Brownies…Yum!

Yummy (and easy) vegan brownies…perfect for sharing, or gobbling up all by yourself! They may not be healthy, but any time spent in the kitchen, these days, is good and fun for all of us. And they’re certainly delicious, and fun to make.


2 cups unbleached all-purpose flour
2 cups raw sugar
3/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon salt
1 cup water
1 cup vegetable oil
1 teaspoon vanilla extract
1 Tablespoon coffee/espresso
1. Preheat the oven to 350 degrees F (175 degrees C).
2. In a large bowl, stir together the flour and water. In another bowl, mix together the raw sugar, cocoa powder, baking powder and salt. Add gradually to the flour and water mixture, stirring well to incorporate. Pour in vegetable oil, coffee/espresso and vanilla; mix until well blended. Spread evenly in a 9×13 inch baking pan.
3. Bake for approximately 25 to 30 minutes in the preheated oven, or until the top is no longer shiny. Let cool for at least 10 minutes before cutting into squares.

Dont use so much sugar. Sub it for brown sugar and then add some sweetner like maple syrup or rice malt syrup instead of oil

Okay, me and my roommate just made these brownies and they turned out horrifically. First of all the flour and water combo turned into some marshmallow like substance and it was too much oil! It was in the oven for 30 minutes and we pulled it out and there was literally oil floating on top and the brownie was still sludge!

I literally just made these and tried a piece and they are delicious! Followed the recipe step by step with no problems. I found it worked best by mixing the flour and water by hand. Yum!! Now hopefully they will last more than one day!
