Raw Vegan Lettuce Wraps. {Recipe}

(This recipe served just myself. But as a high-carb-raw-vegan I am used to eating larger quantities of food. If this seems like a lot for you and/or you’re not a hcrv and are wanting to share this, this could be good for 2 people to share for sure.)

For the wraps:

½  head of romaine lettuce (or as much as you want to use)

For the filling:

1 large avocado diced

2 large tomatoes diced

1 cup of corn

1 large mango chopped

2-3 medjool dates chopped

1 large red pepper diced

4 sun dried tomatoes soaked and then chopped finely

5 springs of chopped cilantro to liking

Add everything together in large bowl and mix thoroughly.

*These ingredients are just what I had in my fridge, feel free to add or remove anything you like to make it your own!

Cauliflower Rice:

½ head of cauliflower chopped finely or desired consistency (or put in food processor until finely chopped)

½  lime squeezed over “rice”

That’s it!

Add your “rice” onto the lettuce leaf and then scoop your filling on top of that. Roll up and devour!

What I love about this lifestyle and diet (raw vegan/fruitarian—low fat and high carb), is that when I eat fresh, live, raw foods, I get to eat as much as I want and when I’m done, I walk away feeling thoroughly satisfied.

Not bloated. Not sleepy. Not stuffed. No guilt.

I rarely, if ever, have indigestion and if I do it’s usually when I’ve decided to throw food combining rules out the window for some silly reason. I haven’t had diarrhea in I don’t remember how long, constipation doesn’t seem to exist in my vocab anymore and that feeling I used to get, where I felt like it’s time to take a little siesta after I ate, well that’s also no longer part of my experience.

I eat, I feel happy, light, but nourished and satiated!

And I truly feel like my body loves me for it! I take care of it, it takes care of me!

Even after nearly two years since I adopted this lifestyle, it still amazes me the effectiveness and force of pure, live, raw fruits and vegetables. We have power over our own health, food can either be our medicine or our poison. And I for one am glad I finally woke up and chose food as medicine!
