Jax Fish House has worked closely with GrowHaus, an indoor farm, marketplace and educational center in Denver’s Food Desert whose goal is to provide healthy, affordable food for the surrounding community and raise awareness about issues of food sustainability over the past year. They have been recycling the oyster shells from the delicious oysters served at Jax nightly to help balance the pH in their tanks (oyster shells are a calcium carbonate type buffer that keep pH from dropping too low). They’ve also brought the employees of Jax to the farm to see everything in action, and are now doing a dinner showcasing their Rainbow Trout grown sustainably in Denver. On May 26th Jax Fish House will have a three course – fund raising dinner for Colorado Aquaponics and The GrowHaus. The dinner will showcase sustainably farmed DENVER Rainbow Trout, watercress, greens and more prepared by Chef Sheila Lucero in Denver and Chef Adam Watts in Boulder. A special wine pairing of Jax-Maurtison Sauvignon Blanc and Jax-Sineann Pinot Noir will also be available for $15. For reservations in Boulder call 303.444.1811 or Denver 303.292.5767.
