I always have mixed feelings when I start to feel a chill in the air.
I’m never ready to say goodbye to the warm summer sun, but I always look forward to winter because it means cozy sweaters, snuggling up in front of the fireplace, and using the weather as the perfect excuse to stay indoors and just be.
I’d love to take the credit for this delicious and healthy oatmeal but my lovely daughter Emily created it, which truthfully, makes me love it even more. There is nothing better than waking up to a special treat created by my sweet girl who seems to love creating recipes almost as much as I do!
I do hope you try this; it’s the perfect way to start your day.
This recipe is measured out as a single serving but feel free to double or even quadruple it.

Chocolate Almond Joy Oatmeal
1/2 cup oats
1 cup water
1 scoop of protein powder
1 Tbsp cocoa powder
1tsp maca powder (optional)
1tsp chia seeds
Stir all the dry ingredients together and then add the water. Cook on medium for about 10 minutes or until all the water is absorbed.
To serve we top it with:
Toasted ribbon coconut
Almond slivers
1 scoop of almond butter
Cacao nibs (optional)
Note: Both vanilla and chocolate protein powder will work in this recipe.
