Mango-Infused Tofu with Tri-Colored Quinoa. {Recipe}

I was tickled to find this recipe on Purple Carrot and make it my way.

Please do not let my ayurvedic teachers know since fruit is eaten alone and allowed to digest before non-fruit is consumed. More than that, mango is eaten completely alone.

I added more than what is in the title, so read the rest to see what else is included. And feel free to adapt to your taste buds’ delight.

Clean the countertops and wash your hands after removing all jewelry, please. Then gather the needed supplies and ingredients and set them up in order of use—mise en place.

This has several steps, and you will use the cutting board several times.

Supplies:

Skillet, pot with lid, potholder, towel, cutting board, patience. Chef’s knife and cooking and eating utensils, spoon rest, good mood food attitude. Blender. I use a Magic Bullet not to be confused with Magic Mike—insert wink and smile.

Ingredients:

>> Main: mango, tofu, quinoa

>> Spices: fresh ginger, sesame seeds, fenugreek seeds

>> Veggies: zucchini, yellow squash, or any you desire

>> Oil: Sesame, oil of choice, or none

>> Extras: coconut liquid aminos, chutney mix, one lime in quarters

Recipe:

Say a mantra or sing a tune and clean those countertops and wash your naked hands. Gather the supplies and ingredients and place in order of use—mise en place. Smile.

Start the water to boil for the quinoa. Place oil, just a little in the skillet, and start chopping the fresh ginger, mango, and tofu, and if using other veggies, karate chop those as well.

Quinoa gets added to water and put the lid on; this should only take a few minutes. Once it is done, place the pot on a towel to rest. Heat the skillet and add in the spices and give them a couple of minutes.

Add chutney mix, cold water, and lime juice to the blender and blend until smooth. Stir the tofu, mango, and then pour the sauce over it, and gently stir. Turn off the burner, light, and fan, and let it sit on the hot burner for about five minutes.

Plate this lusciousness and find a peaceful place to park your bum. Consider kneeling or sitting cross-legged on the floor to be more grounded. Give lots of gratitude and smile. Eat slowly and chew thoroughly and stop eating at your first and only burp. Just like burping a baby post-prandially.
