Easy Vegan Brownies…Yum!

Yummy (and easy) vegan brownies…perfect for sharing, or gobbling up all by yourself! They may not be healthy, but any time spent in the kitchen, these days, is good and fun for all of us. And they’re certainly delicious, and fun to make.

Enjoy!

Ingredients:
2 cups unbleached all-purpose flour
2 cups raw sugar
3/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon salt
1 cup water
1 cup vegetable oil
1 teaspoon vanilla extract
1 Tablespoon coffee/espresso
Directions:
1. Preheat the oven to 350 degrees F (175 degrees C).
2. In a large bowl, stir together the flour and water. In another bowl, mix together the raw sugar, cocoa powder, baking powder and salt. Add gradually to the flour and water mixture, stirring well to incorporate. Pour in vegetable oil, coffee/espresso and vanilla; mix until well blended. Spread evenly in a 9×13 inch baking pan.
3. Bake for approximately 25 to 30 minutes in the preheated oven, or until the top is no longer shiny. Let cool for at least 10 minutes before cutting into squares.

    You must be confusing sugar with actual food. Two cups of sugar, raw or otherwise is more than anyone should consume over any period , ever.

      I doubt she is consuming them all in one sitting..or by her self.. she was just sharing a recipe that I can't wait to make!

      It's a BROWNIE recipe. Since when are brownies expected to be healthy?
      I've noticed that these sorts of comments are common on vegan recipes, possibly b/c 1) vegans generally are more conscious of what they are eating, or maybe 2) non-vegans try to discredit veg recipes in any way possible. You sure never see people dissing sugar on BettyCrocker.com. I'm sure someone will comment on why its not gluten free next.

    I like sugar…and I like brownies. But then again, I like a lot of things other people don’t. I guess that’s what makes everyone’s lives so different.
    In the time I am here – I will be enjoying brownies.

      I feel the same way. Being in the process of transitioning to being vegan I feel like if I need to eat foods that still have a taste and mouth feel similar to the non-vegan counterparts. I made some vegan "magic bars" a few weeks ago and took them to a dinner. I was told that they could not be eaten in a plant based diet. I was so confused since they were made with all plant based ingredients. I need the occasional decadence of a tasty dessert in my life. I will be trying out these brownies but I think I will add walnuts. I have always liked walnuts in my brownies.

  5. You could also substitute unsweetened applesauce — and perhaps coconut oil rather than vegetable oil. (Test using only one cup of flour (or almond meal if you are sensitive to wheat or gluten).     Mine dont look like yours…. ?? I found it really hard to mix the dry mix to the flour water mix too, the flour and water was really gluggy and hard to mix in.

    Mixing the flour with the water first can't be right. I tried that and it was incredibly hard to mix the dry mix and the liquids afterwards. And it turned out horrible. I made a second batch where I mixed all the dry ingredients together and then added all the liquid ingredients and stirred it all up no problem. That worked. Wish I hadn't wasted a whole batch of ingredients though.

    This might be a stupid question, but I don't bake much… Can I use normal sugar or brown sugar instead of raw? I don't have access to raw sugar where i live, but these look so delicious i want to try them!

    I literally just made these and tried a piece and they are delicious! Followed the recipe step by step with no problems. I found it worked best by mixing the flour and water by hand. Yum!! Now hopefully they will last more than one day!
