What are the Top 5 Eco-est Cafes in America?

Given elephantjournal.com’s bike-crazy, fair-trade lovin’, big tea selection, eco to-go cups, fast wireless and bookstore-adjoining biases—as well as my personal ignorance about cafes that aren’t either in NYC, LA or within biking distance of my home in Boulder, Colorado—what are Top 5 best cafes with the best (hopefully mostly organic, veggie) baked goods and food in America?
