The Best Vegan Cookies You’ve Never Had. {Recipe}

Eighteen years ago, my life changed in a big way.

I discovered—before it was hip and cool—that I was allergic to gluten. At that time, all I had to feast on were salads.

After several years of this, as I’m sure you can imagine, I was pretty sad.

Salad with balsamic vinaigrette everywhere I went was beyond depressing.

As the years continued, I discovered allergies to dairy, soy, corn, and refined sugar.

When people discovered this significant quirk about me, they would usually burst into laughter and ask me what I could eat. And, yes, in case you were wondering, that was annoying as sh*t.

So, I began creating my own recipes that were filled with things I could eat.

Then, I would take my creations to dinners and potlucks and watch as the people who mocked me fell in love with my epically delicious and super conscious food (#payitforwardbaby).

Now, I post my super conscious, healthy, and often vegan recipes on my blog to share with others like me who want to (and often their body requires them to) eat conscious, healthy, and on purpose.

This cookie recipe will wow you with its gluten-free, vegan, soy-free, corn-free, refined sugar-free amazingness.

Make these today, and you’ll find yourself in a whole new world of food creations!

½ cup Just Like Sugar Baking
½ cup Just Like Sugar Brown
½ cup coconut butter or ghee or unsalted organic butter, melted
½ cup hemp milk, vanilla unsweetened
1 tsp vanilla extract
1½ cup gluten-free quick oats
1 cup paleo baking flour (or any gluten-free baking blend you prefer, I just keep it grain-free as much as possible, so honor your intuitive knowing for you)
½ tsp xantham gum
½ tsp baking powder
½ tsp baking soda
½ tsp sea salt
½ cup organic raisins

Preheat oven to 350 degrees Fahrenheit. Place all items in the order featured above in a large bowl, mixing until well-blended. Bake for 11 to 15 minutes. Let cool for up to five minutes before serving.

And because these are mostly grain-free, albeit the gluten-free oats, please store in fridge or freezer so they can go the distance. These cookies are also a great frozen summer treat!
